How to cook Tongue ลิ้นวัว

Tongue
Best for: Pressure-cook or simmer then peel, stew, thin-sliced salt-grilledRecommended doneness: fork-tender (stew) / just cooked (thin grill)

Bouncy and tender with a light crunch inside — rich, clean flavour.

Steps

  1. Scrub clean; simmer the whole tongue 2.5–3 hours or pressure-cook 45–60 minutes.
  2. Peel off the skin while still warm.
  3. Stew: cut into pieces and simmer in sauce another 20–30 minutes.
  4. Salt-grill: slice the raw tongue base 3–5 mm thick and salt it.
  5. Grill over high heat 30–60 seconds per side; finish with lime.
Tip: A pressure cooker makes a quick tongue stew, or salt-grill the tongue base. The base is richer and more tender; save the tip for stewing.
