How to cook Chuck Tender ปลาช่อน

Best for: Braise, thin-sliced for shabu/stir-fryRecommended doneness: fork-tender (braise)

Firm and lean — good for braising, stir-frying or thin-sliced grilling.

Steps

  1. There's a gristle seam down the middle – cut it out or slice across it so it stays short.
  2. Braise: cut into chunks, brown, simmer 2–2.5 hours.
  3. Or slice 2–3 mm across the grain.
  4. Stir-fry over high heat for 1 minute, or dip in shabu broth.
  5. Serve right away.
Tip: Chuck tender looks like a tenderloin but isn't nearly as tender – don't cook it as a thick steak. Braise it or slice it thin.
