How to cook Stew เนื้อติดมัน

Stew
Best for: Braise, Thai curries (panang/massaman), pressure cookerRecommended doneness: fork-tender

Tender, fatty and springy pieces — balanced for stews and curries.

Steps

  1. Cut 3–4 cm cubes; pat dry.
  2. Brown in small batches (don't crowd the pot).
  3. Add stock, coconut milk or curry paste to cover.
  4. Simmer low 2–3 hours, or pressure-cook 30–40 minutes.
  5. Done when a fork goes in easily; season at the end.
Tip: Sinewy beef belongs in curries and stews — a pressure cooker gets it tender faster because it runs hotter than a normal boil. Fat-marbled stew meat stays juicy even after long cooking.
