How to cook Aiguillette หางตะเข้

Aiguillette
Best for: Whole on charcoal, pan-sear, Thai-style grilled beefRecommended doneness: medium-rare

Chewy with a slight crunch of sinew and a well-rounded flavour.

Steps

  1. It's a long tapered piece – grill it whole; salt it.
  2. Medium-high heat, turning every 2 minutes, 10–14 minutes total.
  3. Pull at 50–52°C core.
  4. Rest 5–8 minutes.
  5. Slice thin across the grain; serve with jaew.
Tip: The thin tail end cooks first – give it to whoever likes theirs more done, and save the thick middle for medium-rare fans.
