How to cook Jumeau ปลาบู่

Best for: French-style braise (pot-au-feu), stew, thin-sliced stir-fryRecommended doneness: fork-tender

Laced with sinew that turns soft and springy when braised — great for noodle soup.

Steps

  1. Cut into 5 cm chunks.
  2. Brown them, or simmer with root vegetables (carrot, onion, celery).
  3. Cook gently 2.5–3 hours.
  4. Skim off the fat from the top.
  5. Serve with the broth and vegetables.
Tip: Jumeau has gelatinous seams that keep it moist when braised. Keep it at a bare simmer – a hard boil tightens the meat.
